FOOD SPOTLIGHT: DATE SNICKERS BAR
If you’ve been apart of this community for a minute, you’ll know that I love sweets! I do love dark chocolate in all forms- cookies, brownies, ice cream etc. etc. Now the problem with that is all these items can inflame my eczema and rosacea. So I love to create healthy alternatives without the skincare effects. This Dates Snicker bar is the perfect, easiest and yummiest answer! I have managed to recreate this perfect dream of a Snickers Bar but make it healthy and good for you!.
It is also SUPER easy. The best part of this recipe is you can adjust it to make it however you like it! More medjool dates or more chocolate at the bottom or how many peanuts you add. The one item of this simple recipe that is non-negotiable is yhor medjool dates must be soft! I prefer my medjool dates to be pitted because I think it keeps the integrity and just easier.
Ingredients
18 whole Medjool Dates, need to be pitted
1/3 Cup Peanut Butter
1 Cup Peanuts, chopped
1 Cup Semi-Sweet Chocolate Chips
1 Tbsp Sea Salt
The Method
Line a baking sheet with parchment paper.
Split dates open and layer in a rectangle shape – 3 wide and 6 deep – with the inside facing up.
Add another sheet of parchment paper to the top and use a rolling pin, book or another pan to press down to flatten the dates evenly.
Spread on a layer of peanut butter, evenly coating the dates. Top with chopped peanuts.
Add 1 cup chocolate chips to a small bowl and melt in 20 second intervals and mixing in betwen. Spoon onto the peanut layer and smooth to cover edge-to-edge. You can get creative and add different types of chocolate chips and more chocolate if you desire.
Sprinkle the top with 1 tablespoon flaky sea salt.
Place pan in the freezer for 15 to 20 minutes to set.
Cut into pieces and enjoy! Keep leftovers stored in an air-tight container in the freezer.
